Named after the beads of of nectar that reflect the morning light, Autumn Forest Honeydew is similar in consistency to maple syrup and has a floral taste.
Organic Autumn Forest Honeydew originates in the mountain-based rain forests of New Zealand's South Island.
This sweet aromatic sap is sourced from the beech trees by bees who suck up the sap, storing it in their honey sac and fly to the hive where it is transferred to the house bee.
Once in the hive the process begins of turning the sap into honey. The apiarist extracts the honey dew from the wax. The honey comb is warmed to help with the release of the honey.

Active Honeydew
Some regions of the South Island of New Zealand produce Active Honeydew. Active refers to the antibacterial activity of the honey that is unaffected by enzymes in the body that destroy the other healing factors. This antibacterial activity is also unaffected by light, heat, or time. In fact experience has shown that some Active Honeydew actually increases it level of activity over time.
